Make crust: pulse flour, salt, and sugar. Add cold butter and pulse until pea-sized. Add ice water until dough comes together. Divide in two, wrap, and refrigerate 1 hour.
Toss apple slices with sugar, flour, cinnamon, nutmeg, and lemon juice.
Roll out one dough disk and fit into a 23cm pie dish. Fill with apple mixture. Dot with butter.
Roll out second disk and place over filling. Crimp edges and cut vents. Brush with egg wash.
Bake at 220°C (425°F) for 15 minutes, then reduce to 175°C (350°F) for 40-45 minutes until golden and bubbling.
Cool at least 2 hours before slicing. Serve with vanilla ice cream.
