  • 4 salmon fillets (about 180g each), skin-on
  • 3 tbsp extra virgin olive oil
  • 3 garlic cloves, minced
  • 2 lemons (zest of 1, juice of both)
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme leaves
  • 1 tsp Dijon mustard
  • Salt and freshly cracked black pepper
  • 250g cherry tomatoes
  • 1 bunch asparagus, trimmed
  • Lemon slices and fresh dill to garnish

Instructions

    Preheat oven to 200°C (400°F). Line a large baking sheet with parchment paper.

    Mix olive oil, garlic, lemon zest, lemon juice, dill, parsley, thyme, and Dijon mustard in a small bowl.

    Arrange salmon fillets on the prepared baking sheet. Season with salt and pepper.

    Spoon herb mixture generously over each fillet.

    Scatter cherry tomatoes and asparagus around the salmon. Drizzle vegetables with olive oil and season.

    Bake for 12-15 minutes until salmon flakes easily with a fork and is just opaque in the center.
