Blend bananas, oats, eggs, cinnamon, vanilla, and salt until smooth.
Let batter rest 2 minutes โ it will thicken slightly.
Heat coconut oil in a non-stick pan over medium-low heat.
Pour 3 tbsp batter per pancake. Cook 2-3 minutes until bubbles form and edges look set.
Flip carefully (these are more delicate than regular pancakes) and cook 1-2 minutes more.
Serve with fresh berries and a drizzle of honey.
