  • 4 ripe bananas, halved lengthwise
  • 4 tbsp unsalted butter
  • 100g brown sugar
  • 1 tsp cinnamon
  • 60ml dark rum
  • 1 tsp vanilla extract
  • Vanilla ice cream to serve

Instructions

    Melt butter in a skillet over medium heat. Add brown sugar and cinnamon. Stir until dissolved.

    Add banana halves cut-side down. Cook 2 minutes until caramelized.

    Flip bananas gently.

    Remove pan from heat. Add rum carefully.

    Return to heat and tilt pan to ignite (or use a long lighter). Let flames die down naturally.

    Add vanilla extract.
