  • 2 racks baby back ribs
  • For dry rub: 2 tbsp brown sugar, 1 tbsp smoked paprika, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp cumin, 1 tsp black pepper, 1 tsp salt
  • For BBQ sauce: 200ml ketchup, 3 tbsp apple cider vinegar, 2 tbsp brown sugar, 1 tbsp Worcestershire, 1 tsp smoked paprika, 1 tsp garlic powder

Instructions

    Remove membrane from back of ribs. Mix dry rub ingredients and coat ribs generously. Refrigerate 2+ hours or overnight.

    Preheat oven to 150°C (300°F). Wrap ribs tightly in foil and bake 2.5-3 hours until very tender.

    Make BBQ sauce: combine all ingredients in a saucepan and simmer 10 minutes.

    Remove ribs from foil. Brush generously with BBQ sauce.

    Grill over medium-high heat for 5-10 minutes, turning and basting, until caramelized and sticky.

    Rest 5 minutes. Cut between bones and serve with extra sauce.
