  • 600g ground beef
  • 8 rashers thick-cut bacon
  • 4 slices aged cheddar
  • 2 onions, thinly sliced
  • 4 tbsp BBQ sauce
  • 4 brioche buns
  • Coleslaw: 1/4 cabbage, 2 tbsp mayo, 1 tsp cider vinegar, salt
  • Butter for buns

Instructions

    Caramelize onions in butter over low heat 30 minutes until golden and sweet.

    Cook bacon until crispy. Set aside.

    Form beef into 4 patties. Season with salt and pepper.

    Grill or pan-fry 3–4 minutes per side for medium. Add cheese in last minute.

    Toast buns. Brush with BBQ sauce.
