  • 400g ketchup
  • 100ml apple cider vinegar
  • 80g brown sugar
  • 2 tbsp Worcestershire sauce
  • 2 tbsp bourbon (optional)
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne
  • 1/2 tsp black pepper
  • Salt

Instructions

    Combine all ingredients in a saucepan.

    Bring to a simmer over medium heat, stirring to dissolve sugar.

    Reduce heat to low. Simmer 15–20 minutes, stirring occasionally, until slightly thickened.

    Taste and adjust: more vinegar for tang, more sugar for sweetness, more cayenne for heat.

    Cool and store in a jar in the refrigerator for up to 2 weeks.
