  • 400ml coconut milk
  • Spice paste: 4 dried chilies, 3 shallots, 3 garlic cloves, 2cm galangal, 2cm ginger, 1 tsp turmeric
  • 2 stalks lemongrass
  • 400g egg noodles
  • Soft-boiled eggs, pickled cucumber, and fried shallots to serve

Instructions

    Blend spice paste ingredients.

    Cook spice paste in oil until fragrant. Add beef and coat.

    Add coconut milk and lemongrass. Simmer 45-60 minutes until sauce is thick and beef is tender.
