  • 400g sushi rice
  • 500ml water
  • 60ml rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
  • 4 sheets nori
  • 200g imitation crab or real crab meat
  • 2 avocados, sliced
  • 1 cucumber, julienned
  • Sesame seeds
  • Soy sauce, wasabi, and pickled ginger to serve

Instructions

    Cook sushi rice per package. While hot, fold in rice vinegar, sugar, and salt. Fan to cool.

    Place a nori sheet on a bamboo mat (shiny side down). Spread a thin, even layer of rice over the nori, leaving 2cm at the top.

    Sprinkle sesame seeds over rice. Flip so rice faces down.

    Place crab, avocado, and cucumber in a line across the center of the nori.

    Roll tightly using the bamboo mat, pressing firmly. Seal the edge with a little water.

    Refrigerate 10 minutes. Slice with a wet, sharp knife into 8 pieces.

    Serve with soy sauce, wasabi, and pickled ginger.
