  • 1 whole chicken (about 1.5kg)
  • 3 carrots, sliced
  • 3 celery stalks, sliced
  • 1 large onion, diced
  • 4 garlic cloves
  • 2 bay leaves
  • Fresh thyme and parsley
  • 200g egg noodles
  • Salt and black pepper
  • Fresh dill to serve

Instructions

    Place whole chicken in a large pot. Cover with cold water. Bring to a boil, skimming foam.

    Add onion, garlic, bay leaves, thyme, and parsley stems. Simmer 60-70 minutes until chicken is very tender.

    Remove chicken. Strain broth and return to pot. Discard solids.

    Shred chicken meat, discarding skin and bones.

    Bring broth back to a simmer. Add carrots and celery, cook 10 minutes.

    Add noodles and cook per package instructions.

    Return chicken to pot. Season generously. Serve with fresh dill.
