  • 200g dark chocolate (70%), chopped
  • 150g unsalted butter
  • 4 large eggs
  • 4 egg yolks
  • 100g powdered sugar
  • 60g flour
  • Pinch of salt
  • Butter and cocoa for ramekins
  • Vanilla ice cream to serve

Instructions

    Preheat oven to 220°C (425°F). Butter and cocoa 4 ramekins.

    Melt chocolate and butter together. Cool slightly.

    Whisk eggs, yolks, and sugar until pale.

    Fold chocolate into egg mixture. Fold in flour and salt.

    Divide into ramekins. Refrigerate up to 24 hours (or bake immediately).

    Bake 10-12 minutes until edges are set but center is still soft.

    Invert onto plates immediately. Serve with ice cream.
