  • 200g dark chocolate (70%), chopped
  • 4 large eggs, separated
  • 2 tbsp sugar
  • 300ml heavy cream
  • Pinch of salt
  • Cocoa powder and raspberries to serve

Instructions

    Melt chocolate in a double boiler. Cool slightly.

    Whisk egg yolks with 1 tbsp sugar until pale. Fold into chocolate.

    Whip cream to soft peaks. Fold into chocolate mixture.

    Beat egg whites with salt and remaining sugar to stiff peaks.

    Gently fold egg whites into chocolate mixture in three additions — preserve the airiness.

    Divide into glasses. Refrigerate at least 2 hours.

    Dust with cocoa and serve with raspberries.
