Indian Chole Bhature

Punjab's most beloved street food — spiced chickpea curry (chole) served with pillowy, deep-fried leavened bread (bhature). The contrast of the tangy, deeply spiced chickpeas against the soft, airy bread is one of the great pleasures of Indian cooking.

  • For chole: 400g canned chickpeas, 1 onion, 2 tomatoes, 1 tbsp ginger-garlic paste, 1 tsp cumin, 1 tsp coriander, 1 tsp garam masala, 1/2 tsp amchur (dry mango powder)
  • For bhature: 300g all-purpose flour, 1 tsp baking powder, 150g yogurt, 1 tsp oil, salt
  • Oil for deep frying

Instructions

    Make bhature dough: mix flour, baking powder, yogurt, oil, and salt. Knead until smooth. Rest 30 minutes.

    Make chole: sauté onion until golden. Add ginger-garlic paste, spices, and tomatoes. Cook until thick.

    Add chickpeas and 200ml water. Simmer 20 minutes. Mash some chickpeas for texture.

    Roll bhature dough into oval shapes, about 5mm thick.

    Deep fry in hot oil until puffed and golden, 1–2 minutes per side.

    Serve hot chole with fresh bhature, sliced onion, and green chutney.
