  • 600g 80/20 ground beef
  • 4 brioche buns, toasted
  • 4 slices American cheese
  • 4 leaves iceberg lettuce
  • 2 tomatoes, sliced
  • Dill pickle slices
  • Red onion, sliced
  • Special sauce: 4 tbsp mayo, 1 tbsp ketchup, 1 tbsp mustard, 1 tbsp sweet pickle relish
  • Salt and black pepper

Instructions

    Mix special sauce ingredients and refrigerate.

    Divide beef into 4 equal balls. Season generously with salt and pepper.

    Heat a cast iron skillet or griddle over high heat until smoking.

    Add beef balls and smash flat with a spatula. Cook 2–3 minutes until crust forms.

    Flip, add cheese, cook 1 more minute.

    Assemble: sauce on both bun halves, then lettuce, patty, tomato, onion, pickles.
