Make béchamel: melt butter, whisk in flour, cook 1 minute. Add milk gradually, whisking until thick. Season with nutmeg, salt, and pepper.
Spread Dijon on two bread slices. Layer with ham and half the Gruyère.
Top with remaining bread slices.
Spread béchamel over the tops. Sprinkle with remaining Gruyère.
Bake at 200°C (400°F) for 10–12 minutes until golden and bubbling.
Serve hot.
