Place eggs in cold water. Bring to a boil, then simmer exactly 10 minutes. Transfer to ice water for 5 minutes.
Peel eggs carefully. Slice in half lengthwise. Pop yolks into a bowl.
Mash yolks with a fork until fine. Add mayo, Dijon, vinegar, and hot sauce. Mix until very smooth.
Season with salt and white pepper. Taste β it should be tangy and creamy.
Pipe or spoon filling back into egg whites.
Dust with smoked paprika and garnish with chives. Refrigerate until serving.
