Ingredients

  • 500g dried black beans, soaked overnight
  • 400g pork ribs
  • 300g smoked sausage (linguiça)
  • 200g smoked bacon
  • 200g pork shoulder
  • 1 large onion, diced
  • 6 garlic cloves
  • 2 bay leaves
  • Salt and pepper
  • For serving: white rice, farofa, orange slices, collard greens, hot sauce

Instructions

    Soak beans overnight. Drain.

    Brown all meats in a large pot. Remove.

    Sauté onion and garlic until golden. Return meats. Add beans, bay leaves, and water to cover by 5cm.

    Simmer on low heat for 2.5-3 hours until beans are very soft and broth is thick and dark.

    Remove some beans and mash them back in to thicken the stew.

    Serve in a clay pot with white rice, farofa, sliced oranges, and sautéed collard greens.
