  • 3 large eggs
  • 600ml whole milk
  • 2 tbsp melted butter
  • Pinch of salt
  • 1 tsp vanilla extract (for sweet crêpes)
  • Butter for cooking
  • To serve: lemon juice, sugar, jam, Nutella, or savory fillings

Instructions

    Whisk flour, eggs, milk, melted butter, and salt until completely smooth. Rest 30 minutes.

    Heat a 20cm non-stick pan over medium-high heat. Add a tiny knob of butter.

    Pour in a small ladleful of batter, immediately swirling to coat the pan thinly.

    Cook 1–2 minutes until edges lift and underside is golden. Flip and cook 30 seconds.
