  • 600g ground beef
  • 4 large onions, thinly sliced
  • 4 slices Gruyère cheese
  • 3 tbsp butter
  • 100ml beef broth
  • 1 tsp fresh thyme
  • 4 brioche buns
  • Dijon aioli: 3 tbsp mayo, 1 tsp Dijon, 1 tsp fresh thyme
  • Salt and pepper

Instructions

    Caramelize onions in butter over low heat 35–40 minutes, stirring occasionally.

    Add beef broth and thyme. Cook 5 more minutes until absorbed.

    Form beef into 4 patties. Season with salt and pepper.

    Cook patties 3–4 minutes per side. Add Gruyère in last minute.

    Toast buns. Spread Dijon aioli.

    Top patty generously with caramelized onions.
