Roasted Garlic Aioli

  • 1 whole head of garlic
  • 2 large egg yolks
  • 200ml neutral oil
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • Salt and white pepper

Instructions

    Roast garlic: cut top off head, drizzle with oil, wrap in foil, roast at 200°C for 35 minutes until soft and golden. Squeeze out cloves.

    Mash roasted garlic to a paste.

    Whisk egg yolks with Dijon and lemon juice.

    Very slowly drizzle in neutral oil, whisking constantly, until thick and emulsified.

    Stir in olive oil and roasted garlic paste.

    Season with salt and white pepper.
