Ingredients

  • 1 large bunch fresh cilantro (about 60g)
  • 1/2 bunch fresh mint (about 30g)
  • 2–3 green chilies (adjust to taste)
  • 2cm fresh ginger
  • 2 garlic cloves
  • Juice of 1 lime
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 2 tbsp water

Instructions

    Roughly chop cilantro, mint, chilies, ginger, and garlic.

    Blend all ingredients with lime juice, cumin, salt, and water until smooth.

    Taste and adjust: more lime for tang, more chili for heat, more salt if needed.

    Add a little more water if too thick.

    Transfer to a jar. Refrigerate up to 3 days.

    Serve with samosas, pakoras, or as a marinade.
