  • 4 large eggs
  • 4 corn tortillas
  • For salsa ranchera: 400g canned tomatoes, 2 dried ancho chilies, 1 onion, 3 garlic cloves, 1 tsp cumin, salt
  • Cotija or feta cheese, crumbled
  • 1 avocado, sliced
  • Fresh cilantro and lime

Instructions

    Make salsa: toast dried chilies, soak in hot water 10 minutes. Blend with tomatoes, onion, garlic, and cumin. Simmer 10 minutes until thick.

    Warm tortillas directly over a gas flame or in a dry pan.

    Fry eggs in a little oil to your preference.

    Place 2 tortillas on each plate. Top with salsa.
