  • 600g ground beef
  • 4 slices pepper jack cheese
  • 4 fresh jalapeños, sliced
  • For jalapeño rings: 2 jalapeños, 50g flour, 50ml buttermilk, 50g breadcrumbs
  • Chipotle-jalapeño sauce: 3 tbsp mayo, 1 chipotle in adobo, 1 pickled jalapeño
  • 4 brioche buns
  • Lettuce

Instructions

    Make jalapeño rings: dip jalapeño rings in flour, buttermilk, then breadcrumbs. Fry at 180°C until golden.

    Form beef into 4 patties. Season with salt and pepper.

    Cook patties 3–4 minutes per side. Add pepper jack in last minute.

    Blend chipotle-jalapeño sauce.

    Toast buns. Spread sauce.
