  • 300g glutinous (sticky) rice
  • 400ml coconut milk
  • 80g sugar
  • 1/2 tsp salt
  • 2 ripe mangoes, sliced
  • For topping: 100ml coconut milk, 1 tbsp sugar, 1/4 tsp salt, 1 tsp cornstarch

Instructions

    Soak sticky rice in cold water for at least 4 hours. Drain.

    Steam rice over boiling water for 20-25 minutes until translucent and cooked through.

    Heat coconut milk with sugar and salt until sugar dissolves. Pour over hot rice. Mix and let absorb 20 minutes.

    Make coconut topping: heat coconut milk, sugar, salt, and cornstarch until slightly thickened.

    Serve warm rice with sliced mango.

    Drizzle with salted coconut topping.
