Ingredients

  • 600g beef chuck or chicken thighs, cubed
  • 400ml coconut milk
  • 200ml coconut cream
  • 3 tbsp Massaman curry paste
  • 2 medium potatoes, cubed
  • 1 onion, quartered
  • 50g roasted peanuts
  • 2 tbsp fish sauce
  • 1 tbsp palm sugar
  • Juice of 1 lime
  • Cinnamon stick, cardamom pods
  • Steamed jasmine rice to serve

Instructions

    Heat coconut cream in a wok until it splits. Add curry paste and fry 2 minutes until fragrant.

    Add beef and coat in paste. Cook 3 minutes.

    Add coconut milk, cinnamon, and cardamom. Simmer 30 minutes.

    Add potatoes and onion. Simmer 20 more minutes until beef and potatoes are tender.

    Season with fish sauce, palm sugar, and lime juice.

    Stir in peanuts. Serve over jasmine rice.
