  • 3 cups cooked jasmine rice (day-old)
  • 150g shrimp, peeled
  • 2 tbsp kecap manis (sweet soy sauce)
  • 1 tbsp soy sauce
  • 1 tsp shrimp paste (terasi)
  • 3 shallots, sliced
  • 3 garlic cloves, minced
  • 2 red chilies, sliced
  • 2 eggs
  • Crispy fried shallots, cucumber slices, and prawn crackers to serve

Instructions

    Fry shallots in oil until crispy and golden. Remove and set aside.

    In the same oil, fry garlic and chili 30 seconds. Add shrimp paste and stir-fry 1 minute.

    Add shrimp and cook until pink, 2 minutes.

    Add cold rice, breaking up any clumps. Stir-fry on high heat for 3 minutes.

    Add kecap manis and soy sauce. Toss until rice is evenly coated and slightly caramelized.

    Fry eggs separately. Serve rice topped with fried egg, crispy shallots, cucumber, and prawn crackers.
