Ingredients

  • 600ml heavy cream
  • 100ml whole milk
  • 80g sugar
  • 2 tsp vanilla extract or 1 vanilla bean
  • 2.5 tsp powdered gelatin
  • 3 tbsp cold water
  • For berry coulis: 300g mixed berries, 3 tbsp sugar, 1 tbsp lemon juice

Instructions

    Sprinkle gelatin over cold water. Let bloom 5 minutes.

    Heat cream, milk, and sugar until sugar dissolves and cream is hot but not boiling.

    Remove from heat. Add vanilla and bloomed gelatin. Stir until dissolved.

    Strain through a fine sieve. Pour into 6 ramekins or glasses.

    Refrigerate at least 4 hours or overnight until set.

    Make coulis: simmer berries with sugar and lemon juice 5 minutes. Blend and strain.

    To serve, run a knife around the edge and unmold, or serve in glasses topped with coulis.
