Portuguese Pastel de Nata

Lisbon's most famous pastry — a flaky, buttery puff pastry shell filled with a rich, slightly caramelized custard, dusted with cinnamon and powdered sugar. Created by monks at the Jerónimos Monastery in the 18th century. Best eaten warm from the oven.

  • 1 sheet puff pastry
  • For custard: 300ml whole milk, 150g sugar, 30g flour, 4 egg yolks, 1 tsp vanilla, 1 cinnamon stick, lemon zest
  • Cinnamon and powdered sugar to serve

Instructions

    Make custard: heat milk with cinnamon and lemon zest. Whisk sugar, flour, and egg yolks. Pour hot milk over, whisking. Cook until thick. Cool.

    Roll puff pastry into a tight log. Slice into 12 rounds.

    Press each round into a greased muffin tin, shaping up the sides.

    Fill with custard.

    Bake at 250°C (480°F) for 12–15 minutes until custard is caramelized and pastry is golden.

    Dust with cinnamon and powdered sugar. Serve warm.
