  • 400g trofie or spaghetti
  • 200g green beans, trimmed
  • 2 medium potatoes, diced
  • For pesto: 60g fresh basil, 3 tbsp pine nuts, 2 garlic cloves, 60g Parmesan, 100ml olive oil, salt

Instructions

    Make pesto: blend basil, pine nuts, garlic, and Parmesan. With blender running, drizzle in olive oil. Season.

    Boil pasta in salted water. Add potatoes after 5 minutes. Add green beans in the last 3 minutes.

    Reserve 200ml pasta water before draining.

    Toss hot pasta, potatoes, and beans with pesto, adding pasta water to loosen.

    Serve immediately with extra Parmesan.
