  • For pastry: 300g all-purpose flour, 1/2 tsp salt, 4 tbsp oil, 80ml water
  • For filling: 4 medium potatoes, boiled and mashed, 150g frozen peas, 1 tsp cumin seeds, 1 tsp coriander, 1/2 tsp garam masala, 1/2 tsp amchur, 1 green chili, minced, fresh cilantro
  • Oil for deep frying
  • Green chutney and tamarind sauce to serve

Instructions

    Make pastry: mix flour, salt, and oil until crumbly. Add water gradually. Knead until smooth. Rest 30 minutes.

    Make filling: fry cumin seeds, add peas, spices, and mashed potato. Mix well. Cool.

    Divide dough into 12 balls. Roll each into an oval. Cut in half.

    Form a cone from each half. Fill with potato mixture. Seal edges with water.

    Deep fry at 170°C for 8–10 minutes until golden and crispy.

    Serve with green chutney and tamarind sauce.
