Cook chorizo until fat renders and it's slightly crispy. Remove.
Sauté onion and peppers in chorizo fat until soft. Add garlic and spices.
Add tomatoes. Simmer 15 minutes.
Return chorizo to sauce.
Make 6 wells. Crack eggs in.
Cover and cook 8-10 minutes until whites are set.
Garnish with parsley. Serve with crusty bread.
