Fry halloumi slices in a dry pan until golden on both sides. Set aside.
Sauté onion and peppers until soft. Add garlic and spices.
Add tomatoes. Simmer 15 minutes.
Make 6 wells. Crack eggs in. Add halloumi slices.
Cover and cook 8-10 minutes until whites are set.
Garnish with parsley and mint. Serve with crusty bread.
