  • 500g large shrimp, peeled and deveined
  • 400g linguine
  • 6 tbsp unsalted butter
  • 4 tbsp olive oil
  • 6 garlic cloves, minced
  • 150ml dry white wine
  • Juice of 1 lemon
  • 1/4 tsp red chili flakes
  • Large handful fresh parsley, chopped
  • Salt and black pepper
  • Lemon wedges to serve

Instructions

    Cook linguine until al dente. Reserve 200ml pasta water before draining.

    Season shrimp with salt and pepper.

    Heat 2 tbsp butter and olive oil in a large skillet over medium-high heat. Add shrimp and cook 1-2 minutes per side until pink. Remove.

    In the same pan, add remaining butter and garlic. Cook 1 minute until fragrant.

    Add wine and lemon juice. Simmer 2 minutes until slightly reduced.

    Add pasta and shrimp. Toss with pasta water as needed to create a glossy sauce.

    Finish with parsley and chili flakes. Serve immediately with lemon wedges.
