Heat a flat griddle or cast iron to maximum heat. Brush with a thin layer of oil.
Divide beef into 8 loose balls (75g each). Do not pack tightly.
Place 2 balls on the griddle. Immediately smash flat with a heavy spatula and press hard for 10 seconds.
Season with salt. Cook 90 seconds until edges are lacy and brown.
Flip, add cheese to one patty. Stack the other patty on top. Cook 30 seconds.
Assemble with sauce, pickles, and shredded lettuce.
