  • 1kg pork shoulder, thinly sliced
  • 3 dried guajillo chilies
  • 2 dried ancho chilies
  • 3 tbsp achiote paste
  • 4 garlic cloves
  • 1/4 cup orange juice
  • 2 tbsp apple cider vinegar
  • 1 tsp cumin
  • 1 tsp oregano
  • 200g fresh pineapple, sliced
  • Corn tortillas
  • Diced white onion, cilantro, lime, and salsa verde to serve

Instructions

    Toast and soak dried chilies. Blend with achiote, garlic, orange juice, vinegar, and spices into a smooth marinade.

    Coat pork slices in marinade. Marinate 4+ hours or overnight.

    Stack pork on a skewer or in a loaf pan with pineapple slices. Roast at 200°C (400°F) for 25-30 minutes.

    Shave or chop the caramelized outer layer of pork. Return to oven to caramelize more.

    Warm corn tortillas directly over a gas flame.

    Serve tacos with shaved pork, pineapple, diced onion, cilantro, lime, and salsa verde.
