Tahini Sauce

The Middle East's most versatile condiment — sesame paste thinned with lemon juice and water into a creamy, nutty sauce that works as a dip, dressing, or drizzle. The emulsification of tahini and lemon creates a sauce that's simultaneously rich and bright.

Ingredients

Servings:
6
  • 100g good-quality tahini
  • Juice of 1 lemon
  • 1 garlic clove, grated
  • 4–6 tbsp cold water
  • 1/2 tsp cumin
  • Salt
  • Parsley and paprika to garnish

Instructions

  1. 1

Whisk tahini with lemon juice — it will seize up and become thick. This is normal.

  2. 2

    Add garlic and cumin.

  3. 3

Add cold water a tablespoon at a time, whisking until smooth and pourable.

  4. 4

Season with salt. Taste — it should be nutty, tangy, and slightly garlicky.

  5. 5

Adjust consistency with more water if needed.

  6. 6

Drizzle with olive oil and sprinkle with paprika and parsley to serve.
