Tamarind Agua Fresca

Mexico's most refreshing agua fresca — tamarind pods simmered until soft, then strained and sweetened with sugar and brightened with lime. The result is a drink that's simultaneously sweet, sour, and slightly earthy. Served over ice in tall glasses.

Ingredients

  • 200g tamarind paste or 4 tamarind pods
  • 1.5L water
  • 150g sugar (or to taste)
  • Juice of 2 limes
  • Ice cubes
  • Lime slices to garnish

Instructions

    If using pods: remove shells and soak pulp in 500ml hot water 15 minutes. Work through a sieve to extract pulp.

    If using paste: dissolve in 500ml warm water.

    Combine tamarind liquid with remaining water, sugar, and lime juice.

    Stir until sugar dissolves.

    Taste and adjust sweetness and tartness.

    Serve over ice with lime slices.
