  • 4 chicken thighs, boneless skin-on
  • For teriyaki sauce: 4 tbsp soy sauce, 3 tbsp mirin, 2 tbsp sake, 1 tbsp sugar
  • 1 tbsp oil
  • Steamed rice, sesame seeds, and green onions to serve

Instructions

    Mix teriyaki sauce ingredients.

    Score chicken skin. Season with salt.

    Heat oil in a skillet over medium-high heat. Cook chicken skin-side down 8 minutes until skin is crispy.

    Flip and cook 5 minutes more.

    Pour teriyaki sauce over chicken. Cook 3-4 minutes, basting constantly, until sauce caramelizes.

    Rest 3 minutes. Slice and serve over rice with sesame seeds and green onions.
