  • 400g ground chicken or minced chicken thighs
  • Large handful Thai holy basil (or regular basil)
  • 4-6 Thai chilies, chopped
  • 4 garlic cloves, minced
  • 2 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 1 tsp soy sauce
  • 1 tsp sugar
  • 2 eggs
  • Jasmine rice to serve

Instructions

    Heat oil in a wok over very high heat. Fry eggs until whites are crispy but yolks are still runny. Remove.

    Add more oil. Fry garlic and chilies 30 seconds until fragrant.

    Add chicken and stir-fry, breaking up lumps, until cooked through.

    Add oyster sauce, fish sauce, soy sauce, and sugar. Toss to coat.

    Remove from heat. Add basil and toss until wilted.

    Serve over rice topped with the crispy fried egg.
