  • 400g fresh tuna steaks
  • 200g haricots verts (thin green beans)
  • 4 medium potatoes, boiled and halved
  • 4 large eggs, hard-boiled
  • 100g Niçoise olives
  • 4 anchovy fillets
  • 2 heads butter lettuce
  • For vinaigrette: 3 tbsp olive oil, 1 tbsp red wine vinegar, 1 tsp Dijon mustard, 1 shallot minced

    Make vinaigrette: whisk all ingredients together. Season.

    Blanch green beans in salted water 3 minutes. Refresh in ice water.

    Season tuna and sear in a very hot pan, 1-2 minutes per side for medium-rare.

    Arrange lettuce on a platter. Add potatoes, green beans, halved eggs, and olives.

    Slice tuna and arrange on top.

    Drizzle with vinaigrette. Add anchovy fillets.
